SASLOVE
It's through the net that I knew this winery and since I visited the place, these wines rose among my favorites.
The main products of the Saslove winery are three declinations of 100 % Cabernet Sauvignon from the north of Israel. The Aviv, left only three months in french, american & hungarian barrels for maturation reveals a surprising mature style with a generous aroma, in the style of some australian wines. At a price which barely exceeds $ 10 for a bottle, it's one of the best if not the best oppportunity for a red wine in Israel. I love it !
The Saslove is matured 12 months. I own a few bottles of the 1998 vintage which I tasted recently at the winery. This is a very generous wine showing only now its first signs of maturation. Already enjoyable now for its generous character, there's still a lot of time before it reaches its peak. I shall keep them for at least 3 to 5 years more...
The Reserve is matured 18 months in barrels. When my budget will allow, I'll sure put a few aside for some time...
Along the main line of Cabernet Sauvignon, the winery produces also various white wines in small quantities. Chardonnay or Sauvignon, the style is a maximum extraction of white fruit tastes without any wood, the exception being the singular "Blanc de Noir" white of Cabernet Sauvignon.
Barry Saslove being also a reknowned lecturer about wine, the winery is a hotbed of discovery opened to wine lovers.
